Swedish Meatballs (Shvedskiye Fricadelchi)

This recipe doesn’t involve a crockpot, because it is so quick and easy to make it doesn’t require a lot of prep. It does use pre-made frozen meatballs which cuts down immensely on cooking time. Again, this is one of those meals that tastes even better the next day as leftovers. The key is putting the frozen meatballs in the fridge the morning of the meal to allow them to thaw thoroughly.

Swedish Meatballs

Ingredients

2 T. butter
1/2 yellow onion, diced
16 oz. sliced cremini (baby bella) mushrooms
2 T. flour
1 can beef consomme
1 can cream of celery soup
1 T. Worcestershire sauce
28 oz. frozen meatballs
1/3 c. sour cream
Salt & Pepper to taste

Directions

In a large non-stick frying pan, melt the butter. Add the onions, stirring until starting to turn translucent. Stir in mushrooms and flour, stirring until flour has absorbed the liquid, 1-2 minutes. Add beef consomme, cream of celery soup and Worcestershire sauce. Salt and pepper to taste. Stir until bubbly. Add meatballs and stir to coat with sauce. Add sour cream and stir thoroughly until incorporated into the sauce. Cover and cook on low about 10 minutes or until the meatballs are heated through. Serve over cooked egg noodles or rice.

This is a warm, soothing comfort food rich in flavor and filling the belly. I served it with rice rather than noodles due to Granddaddy’s diabetes.

  • Some recipes call for beef broth, but I have found that beef consommé makes the sauce less runny.
  • Adding flour to absorb the liquid, helps the mushrooms retain their firm consistency rather than becoming slimy
  • If Worcestershire sauce is not available, substitute steak sauce for a sharper flavor. Or go without. It neither makes nor breaks the recipe.
  • No sour cream? Substitute a bit of heavy cream instead.
  • White mushrooms work just as well as baby bellas.

To me, recipes are a bit of creative fun. A way to show love to my family and friends.
