Food is comfort at times. At other times it is a necessary thing to keep going, especially when one is stressed and does not feel hunger. Today, it’s about comfort food.
Having come from modest means, my family was fantastic at cooking cheap but healthy meals when I was a child. Noodles were (and still are) cheap. Cabbage and onions as well. Sausage or bacon can be added for extra protein and flavor. The buttery noodles are the best part, if you ask me. This was a meal I hadn’t had since I was about five- or six-years old and it brought back memories of being at my Grandmother’s house with the first bite.
1 pkg egg noodles
1/2 head green cabbage, chopped
1 small onion, yellow or red, sliced
2 cloves garlic, minced
2 T. butter
1 lb. Kielbasa sausage, cut into chunks or 1/2 lb. bacon, fried, drained and crumbled
Directions
Cook the egg noodles per the package direction until al dente. While the noodles are cooking, melt butter in a large skillet. Stir in sliced onion and part of the cabbage, stirring on medium heat until the cabbage starts to wilt. Add the rest of the cabbage and the garlic. Stirring occasionally, add the sausage or bacon. Drain the noodles and add to the cabbage mixture stirring to mix thoroughly. Salt and pepper to taste.
The cabbage should be a bright green color – if not, you’ve overcooked it and it will have a sulfuric smell and taste to it. Using bacon will tend to add salt, so taste before salting.
I was unsure if Big E and his father would enjoy this, so I was greatly pleased when they scarfed it down and went back for seconds. I guess it isn’t just comfort food for myself. Nothing makes me happier than cooking for my family and feeding people. Granddaddy mentioned last night that it wasn’t fair that I went to work, worked all day and came home to cook, but cooking is the most relaxing and enjoyable part of my day.
